Smashed Avocado Sweet Potato Toast
Sweet potato slices toast up to sweet perfection for a wholesome alternative to traditional toast. Top with some smashed avocado for a healthy, filling breakfast that will get you through the day.
sliced into 1/4 inch rounds
prepared Pico de Gallo
Sea salt and fresh ground pepper
Preheat broiler to high heat.
Lay the sweet potato slices on a parchment lined baking sheet and brush lightly with the oil. Sprinkle with salt and pepper and broil until browned, 1-2 minutes. Flip and broil until both sides are browned and toasty.
Mash the avocado with the Pico, and spoon over the sweet potato slices to serve.
