Goooooood morning! I’m currently giving myself a double chin by lying flat on the couch with my pup on my lap while I try to type up this post. My friend at the gym says that all millennials are getting double chin because we constantly look down at our phones. So now I’m constantly aware of the double chin I’m giving myself, but since I live on my phone and computer, the double chin life is inevitable. I accept you double chin, I accept you.
Can we just think about something for one quick minute? It’s Christmas Eve on Sunday. WTF? Where did that come from? I’ve been traveling most of December and we aren’t doing any sort of presents this year, so the closest Christmas feels I’ve had is this peppermint fudge. And even though I’m now ready to feel in the holiday spirit (probably since it’s snowing outside), I can say that I’m incredibly happy that we aren’t doing presents this year. Finding the perfect gift for an exact day is so stressful. And I don’t do well under stress. Why can’t I just buy a present randomly when I find the perfect gift? Why does it have to be given on Christmas? I know I don’t personally want a crappy present from someone just trying to give me something since it’s a holiday. If I want something, I’m an adult and should figure out how to get it. I don’t need to ask someone to get it for me. Isn’t that what adulting is all about?
Speaking of adulting, our Christmas day is going to be spent in adult onesies. And I’m still trying to figure out what to make for brunch. The problem is, my husband and my sister-in-law could care less about food. They seriously don’t care whatsoever. I asked what kind of Christmas cookies they wanted and my sister-in-law said she’s trying to get Mexico-Fit since we go to Mexico soon. I should be getting on the Mexico-Fit train too, buuuuuuuuut Christmas cookies! We are spending our Christmas day brunching and watching Christmas movies (PS thank you for all the Xmas movie recommendations on Tuesday!) while making holiday cocktails and hot chocolate. I’ll concentrate on Mexico-Fit after Christmas Day. In the meantime, it’s fudge season!

- Line a loaf pan with parchment paper and spray with coconut oil spray.
- Place a medium saucepan over medium heat and add all ingredients except for the candy canes. Melt and completely combined, constantly mixing to make sure the chocolate does not stick or burn to the bottom of the pan.
- Once completely combined, pour mixture into loaf pan then top with crushed candy canes.
- Place in the fridge for 2 hours or more to set before slicing into squares before serving!
*If you prefer not to eat candy canes, just top your fudge with some extra mini chocolate chips!
